🍠 Ube & Oreo cake

Ube cake filled with layers of ube halaya and oreo mascarpone cream. Combining two of my all time favourite flavours 💜. And make it extra ubelicious with homemade ube halaya.

Homemade ube halaya recipe:

Ingredients
- 700g frozen purple yam
- 240ml coconut milk
- 235g condensed milk
- 225g castor sugar
- 1 tsp ube extract
- 110g butter (cubed)
- 1 tsp vanilla extract
- ¼ tsp salt

Instructions
1. Chop the yam into cubes and steam until soft
2. Add the yam, coconut milk, condensed milk, castor sugar and ube extract into your mixer. Blend until smooth
3. Pour the mixture into a non-stick pan and cook until it thickens
4. Once thickened, add in the butter, vanilla extract and salt
5. It’s ready to be used or stored in an airtight container

A very decadent dessert from the bottom to the top.

Recipe for the potato chip base:
- 240g @propercrisps chips
- 70g @lewisroadcreamery unsalted butter
- 32g standard flour

Dark chocolate ganache made with @whittakersnz dark chocolate 🤤
