What if I tell you that you can make mini pizzas without fuss? It’s the summer holiday
season and we all need inspiration for a quick and easy meal. The secret is Dole
pineapples in collaboration with the Kiwi classic – Golden Crumpets. I got the chance to
develop this recipe to make our summer nights easy and fun. We all know that crumpets
can be a lifesaver when it comes to feeding hungry bellies. It’s so easy just to pop them in
the toaster. Save that sweet pineapple juice for a glaze on the bacon – it makes the pizzas
that much better!
The summer season means beautifully sweet pineapples. Dole pineapples have been a
repeat on my shopping list. Pineapples on pizzas give it the perfect summer touch. Plus,
you might be able to convince your kids to eat more fruit!
The best part of this recipe is that you can use up all your leftover fridge ingredients for the
pizza. Just make sure you cook down ingredients like mushrooms to remove extra
moisture. I paired mine with capsicum, sweet corn and mushroom for an extra pop of colour
on the pizzas. And who can resist a serving of bacon on top?
You can even get your kids involved to make their own mini pizzas. It only takes 4-5 min to
cook in the oven. You’ll have perfect pizzas with fun stretchy cheese in each bite.

Crumpet pineapple pizza
Ingredients
- 1 Dole pineapple
- 4 Golden crumpets
- 7 rashers of bacon
- 6 mushrooms
- ¼ capsicum
- 70 g sweet corn
- 80 g mozzarella cheese
- 80 g tasty cheese
- 4 Tbsp Pizza sauce or ketchup
Pineapple glaze
- ¼ cup pineapple juice
- ½ cup brown sugar
Instructions
- Cut the Dole pineapple into small chunks
- Reserve the pineapple juice and blend a few pineapple chunks for the glaze
- Grill the bacon until crispy and saute the mushrooms to remove excess moisture
- To make the glaze, heat the pineapple juice with brown sugar until thickened. Brush on top of the bacon
- Cut the mushrooms, capsicum and bacon into small chunks
- Toast the Golden Crumpets
- To prepare the crumpet pizzas, add a generous slathering of pizza sauce or ketchup on the crumpets. Sprinkle with cheese
- Add the pizza toppings and finish off with more cheese on top
- Bake at 180°C for 4-5 min
- Serve and enjoy while hot
