🌰 Monte Blanc chestnut cake

Loved taking my time to make this chestnut cake. When I saw Costco selling peeled and roasted chestnuts, I knew this cake would be on the horizon!

To keep it light, it’s bit of a twist on the classic by using a sponge cake and adding biscoff crumb instead of a tart base.

Ingredients

Chestnut paste:
- 500g chestnuts
- 300g water
- 30g softened unsalted butter
- 50g brown sugar
- 1 tsp vanilla paste

Blitz until smooth

Chestnut cream
- 400ml cream
- 370g chestnut paste
- 1 tsp vanilla paste
- 2 tbsp icing sugar

Whip until medium peaks

Result of a baking itch to make a soft fluffy cake with sweet coffee & vanilla flavours 🤤

THIS mascarpone cream icing is it. Dissolve 5 tsp of instant coffee and a dollop of vanilla extract before whipping it up real good with your sweetened mascarpone cream. It is truely *chefs kiss*

So happy that avos are back in season! Chocolate avocado icing is not only a healthier alternative to icing but it’s also rich and creamy with a delightful chocolate flavour 🤤

Here’s a recipe developed for @nz_avocado that you’ll want to save for this avo season ✨

Ingredients:
- 1 very ripe avocado
- 1/4 cup cocoa powder
- 1/4 cup icing sugar (adjust to taste)
- 2-3 Tbsp maple syrup
- 1 tsp vanilla extract

Instructions:
- Blitz the avocado until smooth and creamy
- Gradually add in the icing sugar, maple syrup and cocoa powder until well combined

Tip: if the icing is too thick, add a little milk until it reaches your desired consistency
