INGREDIENTS
Custard filling
* 45 g milk powder
* 25 g cornflour
* 100 g milk
* 2 eggs
* 45 g castor sugar
* 40 g unsalted butter
* 1/2 tsp cocoa powder
* 1/2 tsp matcha powder
Snowskin
* 33 g glutinous rice flour
* 33 g rice flour
* 20 g cornflour
* 20 g castor sugar
* 150 g milk
* 13 g condensed milk
* 20 g oil
Other
* Handful of black sesame seeds

INSTRUCTIONS
Custard filling
* In a bowl whisk together the milk powder, cornflour and milk until smooth
* Add in the eggs and castor sugar. Continue whisking until smooth
* Using a sieve, strain the mixture while pouring it into a nonstick pan
* Add the butter and cook over low heat
* It will start to clump, keep stirring until the mixture forms into a dough. Use your spatula to get rid of any lumps
* Divide the filling into 3 portions
* In separate bowls, add matcha powder to one portion and cocoa powder to another portion, leaving one with the original custard flavour
* Wrap the 3 portions with gladwrap and put into the fridge 
Snowskin
* In a bowl, add all the ingredients under snowskin ingredients and whisk until smooth
* Pour the mixture through a sieve into another bowl
* Put a plate on top of the bowl and microwave for 1min
* Take it out, stir it around. Some of the liquid should be absorbed
* Put it back in the microwave for another minute
* Take it out and knead the snowskin dough until smooth and stretchy

Tip: scoop the ice cream out and use a cookie cutter to shape it before refreezing and using it on the cake🍦.

INGREDIENTS
* 6 eggs
* 30 g castor sugar
* 90 ml milk
* 60 ml vegetable oil
* 120 g cake flour
* 30 g cornflour
* 2 tbsp matcha powder
* 1/2 tsp cream of tartar
* 100 g castor sugar

INSTRUCTIONS
* Whisk the egg yolks with 30g of castor sugar
* Mix in oil and milk.
* Sift in the cake flour, cornflour and matcha to combine.
* Beat the egg whites and cream of tartar and gradually add in rest of the castor sugar. Beat until it reaches soft peaks, not stiff peaks!
* Gently fold the egg white into the yolk mixture until well-combined.
* Pour into a 8" pan.
* Bake for 50min at 170°C in a hot water bath. This is the key to a moist and spongy texture!
* The cake is done when a skewer inserted comes out clean.
* Drop the cake on the kitchen bench to prevent shrinkage. Put a tea towel underneath to protect it.
* Rest the cake for 10min in the pan. After that, invert to fully cool on a rack

🍞 Turn rice Into BREAD!

Based on recipe by @chez.jorge

Ingredients
360g short grain rice
240g water
45g vegetable oil
6g salt
25g brown sugar
7g instant yeast 1 tsp pandan extract

DIRECTIONS:
1) Wash the rice and soak overnight
2) Drain the rice and put all the ingredients into the blender
3) Blend until it resembles a thick paste. The batter should be around 40C
4) Pour into a lined loaf tin
5) Spritz with water on top and leave to proof at 40C
6) After about an hour, bake at 190C for about 40min
7) Once baked, leave to cool on a wire rack
8) Enjoy while soft but it’s delicious toasted the next day. Crispy on the outside, and soft and mochi on the inside.

Like my favourite grazing platter, always balancing the chocolate with some chips 😛.

A very decadent dessert from the bottom to the top.

Recipe for the potato chip base:
- 240g @propercrisps chips
- 70g @lewisroadcreamery unsalted butter
- 32g standard flour

Dark chocolate ganache made with @whittakersnz dark chocolate 🤤
