A gentle lemon & yogurt sponge cake is sometimes all you need! Keep things clean & minimal with a little mascarpone cream and dried lemon slices 👌

The yoghurt from @cathedralcovenaturals keeps it nice and moist, and the coconut flavour pairs beautifully with the lemon 🍋. Whipped up nicely using my trusty @froothie mixer.

🍵 Matcha oreo cake

My favourite drink in cake form 🤤. A cake that bridges the older tea-sipping generation and the younger oreo loving generation. And who remembers the times when matcha kitkats could only be bought in Japan?? Now we are truely so spoilt with access to all sorts of overseas snacks 🙏

Save the recipe for the softest matcha sponge cake ⬇️

INGREDIENTS
* 6 eggs
* 30 g castor sugar
* 90 ml milk
* 60 ml vegetable oil
* 120 g cake flour
* 30 g cornflour
* 2 tbsp matcha powder
* 1/2 tsp cream of tartar
* 100 g castor sugar

INSTRUCTIONS
* Whisk the egg yolks with 30g of castor sugar.
* Mix in oil and milk.
* Sift in the cake flour, cornflour and matcha to combine.
* Beat the egg whites and cream of tartar and gradually add in rest of the castor sugar. Beat until it reaches soft peaks, not stiff peaks!
* Gently fold the egg white into the yolk mixture until well-combined.
* Pour into a 8” pan
* Bake for 50min at 170°C in a hot water bath. This is the key to a moist and spongy texture!
* The cake is done when a skewer inserted comes out clean.
* Drop the cake on the kitchen bench to prevent shrinkage. Put a tea towel underneath to protect it.
* Rest the cake for 10min in the pan. After that, invert to fully cool on a rack 
*For a taller 6″ cake, bake for about 1 hour and 5min using two 6″ pans

🍰 Fluffy gluten-free cake

I think I may have cracked the code to a FLUFFY gluten-free cake. It’s all possible with rice flour! Best of all, it’s taste tested and coeliac certified 😆👌

INGREDIENTS
* 6 egg yolks
* 40 ml oil
* 100 ml milk
* 140 g rice flour (regular not glutinous)
* pinch of salt
* 6 egg whites
* ½ tsp cream of tartar
* 80 g castor sugar
* 1 tsp vanilla extract

INSTRUCTIONS
* Whisk the egg yolks, oil and milk together
* Add the rice flour and salt in the batter. Mix until smooth
* Add in vanilla extract and mix until incorporated
* Whisk egg whites with the cream of tartar
* Once frothy, slowly add the sugar in batches into the egg white, being careful not to deflate the egg whites in one big batch
* Beat until medium peaks are formed
* Gently fold the egg whites into the egg yolk batter until combined
* Pour into two prepared 6" pans. Only the bottoms needs to be lined with baking paper
* Bake for 1 hr 5 min at 170°C in a hot water bath
* The cake is done when a skewer inserted comes out clean
* Drop the cake on the kitchen bench to prevent shrinkage. Put a tea towel underneath to protect it
* Rest the cake for 10min in the pan. After that, invert to fully cool on a rack
