Ever since I made my tofu ice cream, I’ve been obsessed with making a tofu dessert series. Here is Episode 1: Tofu Matcha Cake.
The tofu gives it a beautiful soft crumb that’s almost springy to bite, and just the right balance of sweetness. Perfect for an afternoon tea, a cozy home café moment, or whenever you want a dessert that feels a little special but still healthy with a good dose of protein.
Ingredients
Method
- Line base of an 8” round pan
- Whisk matcha with 3 tbsp warm milk until smooth
- Blend tofu until completely silky
- Stir in the matcha paste
- Whisk eggs and sugar until pale
- Add oil, remaining milk, vanilla
- Sift flour, baking powder, salt
- Fold gently until smooth and lump-free
- Pour batter into 8”pan
- Place pan in a hot waterbath
- Bake for 60 minutes at 160°C
- Remove pan from water bath and cool completely
- Gently drain tofu (don’t press hard). Pat dry lightly if very wet
- Blend tofu until completely smooth and glossy
- Whip cream to soft peaks (not stiff)
- Gently fold blended tofu into whipped cream
- Add powdered sugar, vanilla, salt
- Chill at least 40 minutes to set before using
